Eat Healthy When You Travel

February 21, 2012 – We are traveling. When I first moved to Minnesota, I met a couple on the airplane who was traveling to Florida for a getaway. It was December. I was traveling on business. This couple explained to me that when you live in Minnesota, it is nice to get away in December, but when it gets to be February, it is necessary to get away. I have lived in Minnesota for 10 years now, and I understand what they mean.

The dilemma for me is how to travel and still eat a healthy diet of food. I have been cooking for two for quite awhile now, since the kids are grown and gone. I like to prepare some picnic lunches for us in the car when we go. We will usually drive for two or three days when we get away, trying to avoid the snow and ice on the way to a warmer climate.

The car lunches will usually include a sandwich of peanut butter and cheese, or avocado and cheese. I will throw some fruit in like an orange, a banana or some cut up apples. We will usually have a granola bar for dessert. Water is the drink of choice, but we will usually stop for gas and get a cup of coffee or tea.

We have rented a small place over a garage to stay for two weeks in Austin, Texas. It is furnished and has the basic kitchen utensils. So, for dinner last night, I stir fried some spinach and mushrooms and mixed it with rice for our meal with a can of salmon. Tonight, I am going to mix up a similar stir fry and add a couple of eggs but I am using canned tuna this time.

Canned salmon, sardines, and tuna are going to be versatile for sandwiches and easy pasta dishes easy quick meals that are still healthy for us. We bought some cereal and fruit for breakfast. There are some good places to eat here, but we don’t have to eat the high salt, high fat dinners every night.
